- 500 gr salmon
- 50 gr bread
- q.b. oregano
- q.b. rosemary
- q.b. thyme
- q.b. white pepper
- q.b. mint
- q.b. shallot
- q.b. grated lemon peel
- q.b. salt
- 25 g extra virgin olive oil
- 4-5 capers
- 1 teaspoon mustard
- 1 teaspoon soy sauce
- 1 teaspoon bbq sauce
Proceeding
- In a mixer, chop the bread, together with all the spices, the lemon zest, the shallot and the oil.In this way you will get the breading for salmon.
- In a small bowl, mix together soy sauce, mustard and bbq sauce.
- Brush the sauce over the whole surface of the salmon.
- Sprinkle the salmon with the breading, capers, a little shallot cut finely and finally pour the pistachio cream.
- Bake the salmon in a ventilated oven at 180 degrees for twenty minutes.
- Serve the salmon while it is still hot. Keep in the refrigerator for 2-3 days.
