The chocolate brownie that we will prepare is carbohydrate-free, gluten-free, sugar-free, suitable for those who follow a ketogenic diet or, simply, for those who want a dessert without carbohydrates. Before the recipe, however, a little study on an ingredient that I often use in my recipes, sweet and savory, ghee butter.
Let's discover the ingredients: Ghee Butter
Ghee is a kind of clarified butter but, unlike the latter, it is prepared by bringing the butter to a boil, which is then deprived of the aqueous part, its proteins, and lactose. Butter has often been demonized because of its saturated fat content. We know that these fats if taken in excess, are linked to the increase in cholesterol, cardiovascular diseases, and other metabolic problems.
I want to remember, however, that the right quantities of saturated fat, from selected foods, are necessary for the functioning of different parts of the body, for bone health, for the functionality of the nervous system, and for improving and strengthening the immune system. An important characteristic of ghee is that its preparation leads it to be free of caseins and lactose-free, making it a "pure fat", not made up of hydrogenated and trans fats, which over time can be very harmful to health. Ghee is mainly composed of short-chain fatty acids, easily digestible, which convert to energy very quickly compared to other saturated fats. It also contains a fatty acid called butyric acid, important for its role in digestive well-being.
In ghee, you can easily find a wide range of fat-soluble vitamins such as A, D, E, and K, essential for the health of our body. Furthermore, the vitamin A contained in ghee is not present in other edible oils. According to Traditional Indian Medicine, the benefits of ghee are multiple: it eliminates toxins from the body, increases digestive efficiency, increases, and balances the body's vital energy and strengthens the immune system. Ghee, as we have seen, can bring many benefits to our body but, like all things, we must not abuse it and we must choose a quality product, possibly grass-fed. Those who suffer from lactose intolerance or high cholesterol, but do not want to give up the taste of butter, can simply replace it with ghee without exceeding the quantities.
Chocolate Ketogenic Brownie Recipe
The ketogenic diet does not involve the use of carbohydrates, and it is, therefore, more difficult to satisfy one's desire for dessert. This chocolate brownie recipe is an easy and quick alternative, it does not require the use of carbohydrate flours and is made with bitter cocoa powder and coconut flour.
Ingredients
- 1 egg
- 2 tablespoons of bitter cocoa
- 10g ghee butter or coconut oil
- 2 teaspoons of coconut flour
- 1 teaspoon erythritol
- ½ teaspoon vanilla yeast for cakes
- Vanilla essence (optional)
- 5-10g 99% dark chocolate
For the Topping
- 1 tablespoon of Iso Fuji with Chocolate Gourmet flavor
- q.s. water
Procedure
- First, melt the butter and sweetener. Add the natural vanilla flavor, bitter cocoa, and coconut flour. Also, insert a medium-sized whole egg and mix. In the center of the cup place the chocolate previously cut into small pieces.
- Bake at 900w for 1 minute, maximum 1 minute and 30 seconds.
- Separately, mix the isolated proteins with a drop of water at a time, until they form a fairly thick cream.
- Now assemble your pie, you can add 1 tablespoon of Greek yogurt and finally the cream of protein powder.
- This carbohydrate-free brownie is perfect to eat while still hot but can also be enjoyed cold.
