We all know that vegetables have important percentages of fiber and water but not everyone has thought about how these two simple properties can be used to obtain soft and full-flavored cake bases.
Carrots, tomatoes, onions, squash and zucchini but also aubergines and potatoes are some of the most used vegetables in pastry to give life to cakes, donuts and even ice creams..
The fashion of the moment is to take advantage of seasonal vegetables to get to eat with awareness and avoid waste.

Desserts with vegetables are an alternative that is very popular: those who have included only certain foods in their lifestyle, mothers who are able to make their children eat vegetables by hiding it inside a beautiful chocolate cake, to nutritionists who see less caloric and harmful sweets rise than the classic butter and sugar and to all those who love to experiment and discover new flavors so that eating is always something pleasant, made up of variations and discoveries and never a monotonous, repetitive and tiring act .

Soft pumpkin and chocolate cake: a good way to let those who have never tried them try vegetables in a cake but also to those who love them very much!!!

 

Ingredients:

300g pumpkin puree
3 medium eggs
150g erythritol
50g soft ghee
2 vials of orange flavor aroma
250g of flour type 0
50g of rice starch
16g of baking powder
50g of dark chocolate drops

Method:

In a container we work with the electric frste the eggs with the erythritol until the mixture is frothy and doubled in volume.

We combine the ghee butter and continue to work with the mixer positioned on a medium / high speed.

We also add the pumpkin puree with the orange flavor.

Now add the sifted flours with the yeast to the wet ingredients: turn well until you get a smooth cream without lumps.

Finally we also add the chocolate chips.

We pour the cream obtained into a cake mold (20cm) where we have passed the coconut oil buffered with kitchen paper.

We bake in a preheated and static oven at 170 ° for 50 minutes.

Let the cake cool completely inside the mold.

Let's taste immediately.
