Light tart with strawberry jam

The strawberries

Technically, strawberry is not a fruit. For this reason, it is also called false fruit and aggregate fruit.
However, having a moderate calorie content, mainly borne by sugars (fructose), strawberries by convention are sold as fruit.

Light and delicious, our tart with strawberry jam

Ingredients

200g flour 00 or 0 or wholemeal

50g oatmeal biscuit taste

1 egg

80g butter ghee/clarified butter/butter

50g erythritol or cane sugar

1 pinch of salt

2g vanilla yeast for sweets

Grated lemon zest (optional)

3 tablespoons strawberry jam 100% fruit

Procedure

In a bowl add the flour, salt, yeast and erythritol. Create a fountain and in the centre insert the egg and butter in pieces, cold from the refrigerator. Knead with your hands or in a stand mixer, pass everything on a work surface and continue to work with your hands until you get a smooth and compact dough.

Cover with cling film and let it rest in the refrigerator for at least half an hour.
At this point, dust the worktop again with flour and roll out the pastry with a rolling pin.
Line with oven paper a tart pan or grease with butter and sprinkle with flour the base.
Lay the dough and cut the excess.

Pierce the base with a fork and handle the edges so that they adhere to the pan.

Pour the jam and spread it over the entire surface.
Apart prepare the strips of dough to use the composition of the tart.
You can brush the dough with a beaten yolk to obtain a more marked browning.
At this point bake at 180 degrees for 15 minutes, ventilated oven.
Cool and enjoy it as it is accompanied by Greek yoghurt or Skyr lean and sugar-free to increase the protein of your snack/ breakfast.
