An idea for a lunch or a salty and protein snack? A nice pizza pancake with a delicious filling. To the classic sweet pancakes, this salty alternative will surprise you with its unexpected and extremely satisfying flavour. It is possible to make it thanks to the oatmeal pizza taste! Besides being delicious, it is also a satiating meal thanks to the presence of many proteins and fibres and good fats such as those present in the yolks.

Properties

Eggs are a valuable source of vitamin A, beta carotene (which we convert to additional vitamin A), B vitamins, all, including B12. Iron and calcium are present even if not in very high quantities, however, they are particularly bioavailable and therefore highly absorbable. The colour of the yolk depends on what the hens eat and their race.
If it is dark orange it means it is rich in carotenoids and beta carotene. The lighter yolks on the other hand are rich in Omega 3.

The eggs are made up of 76% water, 13% protein, 10% lipids, traces of carbohydrates, no fibre. The egg white is formed for 85% by water, and the rest by proteins. The yolk is made up of half of water, the proteins are 1/3 and the lipids 2/3.
The egg is a protein-rich food. In fact, egg proteins are of the highest quality, their protein quality is better than that of meat, fish and milk. This is because it contains all the essential amino acids in almost perfect proportion.

Contrary to what you might think, the egg is not such a fat food. It has only 10% lipids. The lipids of the egg are not found in the egg white but all in the yolk. He’s got a little bit of sated fat, but they’re some of the most harmless ones for cardiovascular health. The presence of these saturated fats is balanced by monounsaturated fats. In fact, the most abundant fats in the yolk are the monounsaturated ones, excellent from the nutritional point of view. In fact, the yolk also contains linoleic acid, of the omega 6 families.

And these fats are not of bad quality. They are better than those contained in red meat and cheeses. An average egg of about 60 g has between 5 and 6 g of fat. Carbohydrates are just 0.4 g and protein is about 7 g. An average egg has about 73 kcal.
In addition, the egg contains cholesterol but does not raise cholesterolemia, even if we eat eggs every day. To raise cholesterol is not cholesterol but some saturated fats, sugars in our diet (for the action of the insulin), and metabolic causes.

Pizza! A tasty and light alternative.

Ingredients

  • 50 g oatmeal taste pizza
  • 2 eggs
  • 1-2 cheese slices
  • Salsa Peri Peri or BBQ
  • Rosemary
  • Garlic powder
  • Pepper
  • Smoked paprika
  • Salt
  • Cherry tomatoes
  • Salad
  • Light mayonnaise

Preparation

With the help of two bowls separated the egg whites from the outside.
Add all the spices, a pinch of salt and the oatmeal to the taste pizza (and a drop of milk or water). Stir well until you get a smooth batter and no lumps.

Put a non-stick frying pan on the stove and once it reaches temperature, pour the dough inside. Cover with lid and cook for 2-3 minutes until you see small bubbles, then turn the pancake and cook for 1 minute on the opposite side.
Meanwhile, in the bowl with the egg yolks add a little 'bbq sauce or peri-peri and 2 slices of thin pieces, cook all in a non-stick pan for 2 minutes.
To assemble the pancake spread inside a little light mayonnaise, add the eggs, a sauce to your liking, a few tomatoes cut in half and a bit of lettuce or iceberg salad.
